Why food is preserved, methods of preservation, and causes of food spoilage will be discussed. Jellied products, types, ingredients, extracting juice for jelly, low or no sugar products will be discussed.
Lab: using a Boiling Water canner, and making jellied products using long boil method and purchased pectins.
